Ingredients:

1/2 cup of red onion - diced 
2 cloves of garlic
2 zucchini
1 Tbsp of oil
300g of firm tofu
1 Tbsp of tamari or soy sauce
1 Tbsp of Thai Panang curry paste
1/2 tsp of salt
1 Tbsp of honey
2 Tbsp of lime juice
1/4 cup of mint - sliced
Wholegrain bread for serving
